Here is a simple recipe for pumpkin pancakes that we then top with scoops of Naked Krak butter, they are so delicious you don't even need syrup!
Sift together ; 2 cups flour, 3/4 cup sugar, 1 t. Baking powder and a good pinch of salt, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg and 1/8 teaspoon clove.
Stir in 7 ounces of pureed pumpkin( a generous cup) , 1 cup 1/2& 1/2, and 4 egg yolks(save the whites)
Beat the 4 egg whites with a pinch of cream of tartar until stiff peaks form. Stir 1/3 of the egg whites into the pumpkin mix then fold in the remaining whites.
Spoon onto hot griddle or pan and cook until golden.
NAKED KRAK BUTTER
Add one heaping tablespoon of honey to 2 sticks of room temp butter and whip until fluffy. Stir in 1/4 to 1/2 cup of well crumbled honeycomb (also known as Naked Krak) Put in ramekin or small bowl and refrigerate until set.
